Monterey Bay Smoked Salmon

Your Green Mountain Barbecue can make the meanest smoked salmon. This recipe works best if you have 24 hours to marinate the Salmon, but the final product is worth the extra time and effort. Smoked Salmon is an art form that takes time to get right, but when you do, you will be a favorite of many. The slow and low method of cooking is really what your focus is when grilling your salmon. Smoking is a slow art form, so taking the time it needs is key to getting a consistent product every time.

  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 2 cups soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 tablespoons vinegar
  • 2 teaspoons garlic powder
  • A few drops of Tabasco sauce
  • Salmon Filets

Marinade Preparation

  • 2 cups soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons vinegar
  • 1 teaspoon black pepper
  • A few drops of Tabasco sauce

Smoked Salmon Preparation

  1. Combine marinade ingredients and mix thoroughly.
  2. Set portion aside for basting
  3. Marinate the fish overnight in the refrigerator.
  4. Set grill at about 180°.” Smoke the salmon for about 5-8 hours until you like the texture.
  5. You can sprinkle the marinade over the fish while it cooks for added flavor and aroma while it smokes.
